Is there a way to automatically apply a default watermark or to discourage downloading of images in the gallery?  That would be a nice addition if possible.

No, not in the current version.
It's simply impossible to avoid people from getting images from your site (using an html gallery, and even otherß types of galleries).

A watermarking thing might be a good idea though. How exactly do you see this?

Yeah preventing is impossible that is true...maybe just disabling right click etc. to discourage the casual surfer - the power user will still find a way though.

For the watermark - I have seen other gallery modules where you can either enter text or choose a masking image which will be superimposed over the image when it is loaded.  I am just starting to use Joomla and this is the first gallery I have tried - before I used DotNetNuke and there are completely different modules but I am assuming the same results can be achieved.

yeah, technically it can be done, will just need to have a look at it.
